Simonsig Cabernet Sauvignon 2018

Taste profile: The wine has a crimson colour with a dark core. A perfume of wild blackberry and cranberry fills the glass with gentle hints of violets, cocoa and cured meat savouriness. On the palate, there are complex flavours of creamy strawberry, ripe plum and a touch of tilled earth and fynbos. It is a well-balanced wine with fine, well-integrated tannins that leaves a long dry finish.

Grape: 100% Cabernet Sauvignon.

Serving Tips: Serve with braised short rib with turnips and carrot purée. Deboned lamb rib with charred cauliflower and jus. Flavourful and heartier pastas.

Winemaking: The 2018 vintage was really challenging, due to the prolonged drought which was accompanied by water restrictions, and which some believe to be the worst in 100 years. The expertise of the vineyard team and cellar were definitely put to the test by the warm and dry climatic conditions. We adapted our practices both in the vineyard and the cellar, to decrease the effect of water shortages. The dry weather throughout the season did have its advantages, as vines were healthy, with little or no pests or diseases being recorded in most regions. The dry, warm weather resulted in smaller berries with great intensity.
