Santa Carolina Gran Reserva Carmenére 2019

Tasting Profile: With a concentrated violet color, with brilliant ruby ​​highlights, this Carmenère unfolds aromas of fresh black fruit on the nose, such as plums and cherries, with nuances of tobacco leaves and sweet spices. On the palate it is juicy and full-bodied, with long, well-structured tannins that support its vibrant black fruit and blend well with notes of dark chocolate and spices. A gentle minerality persists on its finish.

Grape: 100% Carménère.

Serving Tips: Serve 16-18°C. This wine pairs Margherita pizza, polenta with meat in juice and mushrooms, potato pie with meat.

Winemaking: In the Cauquenes Valley, the start of the 2018/2019 season was cool and rainy, which caused a decrease of up to 20% in yields that resulted in concentrated grapes with good acidity and great color. The good temperatures and light conditions, as well as the absence of rain during the harvest, allowed the vinyard to achieve optimum quality this season. After being harvested by hand, the grapes were destemmed and pressed, to later be deposited in stainless steel tanks. Alcoholic fermentation was carried out in the traditional way, at around 28ºC, using selected yeasts. During the post-fermentation maceration, various pump-overs were applied to obtain a greater intensity of color and flavor. After malolactic fermentation, the wine was aged for 8 months in contact with French oak and was bottled 6 months after the aging process was completed.
