Château Filhot 2010 Half
Tasting Profile: A golden-yellow in colour. The nose is rich and aromatic with notes of honey and citrus fruits. On the palate, creamy and well-rounded with further tropical fruit and vanillin notes. The acidity is balanced and the finish floral and surprisingly fresh. Altogether an elegant and complex dessert wine.
Grape: 60% Sémillon, 36% Sauvignon Blanc and 4% Muscadelle.
Serving Tips: Serve chilled 7°C, a classic accompaniment to foie gras or Roquefort cheese served with fresh figs. Otherwise try with spicy Moroccan or Indian dishes.
Winemaking: he estate is situated just north of the of Sauternes and today is owned and run by Henri de Vaucelles, assisted by his son Gabriel. Between them they have undertaken an ambitious programme of replanting and renovation over the past 30 years including a total renovation of the cellars in 1995. New French Allier oak has also been introduced. Although the estate comprises of 350 hectares only 62 are within the Sauternes appellation. These vines are situated on gravel, clay soil with excellent drainage, well suited to the Semillon, Sauvignon Blanc and Muscadelle vines that grow here. The grapes are hand-harvested, yields are low and the wine spends 3 years in oak before bottling.
