Recioto Della Valpolicella 2018
Tasting Profile: Ruby red colour. Fruity, fragrant, velvety, sweet taste with intense note of cherry and “marasca cherry”. It is heavily spiced and has an intense and varied aroma of sweetness, ripe berries and tobacco.
Grape: 70% Corvina Veronese, 15% Corvinone and 15% Rondinella.
Serving Tips: This delicious recioto dessert wine is wonderful with blue cheese, berry or chocolate desserts and not least with Ris à l'amande with cherry sauce.
Winemaking: The harvest is done manually and only towards the middle of October, when the sugar content is high. After the harvest, the grapes are dried (appassimento) in cassettes until they are vinified after drying, which results in a concentration of the sugar content, but which also contributes to a microbiological change of bacteria and aromatic substances in the dried grape mass. The Reciotto dessert wine is then vinified, which due to the high sugar content inhibits the ability of the yeast cells to convert the sugar into alcohol, and therefore only achieves approx. 12.5% alc. vol. The wine is then racked and then stored for approx. 18 months in French Allier and Nevers casks for further maturation.
